more recipes, just for the halibut....

haha, get it?! "just for the halibut" kinda sounds like "just for the hell of it".
my husbands family lives in alaska, and every once in a while they'll send us some fresh halibut and salmon they've caught. it's sooooooo good. so much better than ANY fish you can buy here. i'd never had halibut before we got married, and now it's my favorite fish. here are 3 of my favorite halibut recipes. if you like halibut, please, please, please try them!
this recipe is the first halibut recipe i ever tried. it's still a favorite of ours and we go back to it time after time!

recipe #1) citrus baked halibut

1 pound fresh halibut steaks (3/4 inch thick)
1 tablespoon margarine or butter
1/3 cup finely chopped onion (i use red onion)
1 clove garlic, minced
2 tablespoons snipped fresh parsley
1/2 teaspoon finely shredded orange peel
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup orange juice
1 tablespoon lemon juice

1. rinse fish and pat dry with paper towels. cut into 4 serving-size pieces, if necessary. arrange in a 2-quart square baking dish.
2. in a small saucepan melt margarine; add onion and garlic. cook till tender; remove from heat. stir in parsley, orange peel, salt, and pepper; spoon over fish. sprinkle orange and lemon juices over fish. bake, covered, in a 400ยบ oven for 15 to 20 minutes or till fish flakes easily with a fork. spoon pan juices over fish. makes 4 servings.

i discovered this next recipe last year. i'm soooo glad i did. it might sound strange to have strawberries and fish together... but trust me, it's delicious! i have it scribbled on a note card & for some reason i don't have the amount of fish written down. the strawberry salsa is enough for 4 people though. you can make the salsa ahead, and keep it in the fridge until your fish is done.

recipe#2) strawberry topped halibut

1 pint of strawberries
1 tablespoon honey
juice of a lime
2 1/4 tablespoons red onion
jalepenos (add as many as you like- i'm not a jalepeno fan, so sometimes i'll just add a bit of canned chopped mild green chilies)
1 tablespoon cilantro

clean strawberries. dice all but 4. puree 4 strawberries with honey and lime juice. add the rest of the ingredients. let stand. serve cold.
grill fish until it flakes easily and is done. spoon strawberry salsa over warm fish.

recipe #3) fish and chips

who doesn't love beer battered fish and chips?!?! it's a recipe from jamie oliver, he's british, he knows his fish and chips!!! this recipe is still online, so i don't have to type it out for you! woohoo! click HERE for the recipe. i use a dark beer, and it HAS to be super cold. make sure your fish is patted dry, it also helps to dredge it in flour before battering it. when i find a recipe online, i always read the comments from users. it gives you a lot of good tips and/or substitutions.
